Two + Five is partnering with youth across the state to bring you the best beef in Texas. Developed through hours of care, feeding, and dedication, these steers are finished out using our proprietary Finish Line program and offered to you! The best beef, supporting Texas youth in agriculture - what could be better?
A Quarter Cow. Enough Beef to Change How Your Family Eats.
Approximately 125–150 lbs of show-finished Two & Five Ranch beef, vacuum-sealed and frozen.
Stock your freezer with beef that has a story behind every cut. A Two + Five Ranch quarter cow gives your family four to six months of premium beef — from weeknight ground beef to special occasion ribeyes — all from a single steer you can trace back to the show ring.
We work with Texas 4-H and FFA families to finish their post-show steers on our proprietary Two + Five Finish Line™ three-phase program. Ninety days of precision feeding, daily health monitoring, and a documented finishing protocol designed to achieve USDA Prime grade. The carcass report doesn't lie — and we share it.
What's in your quarter: A mixed quarter draws from across the animal and includes representation from every primal group:
Steaks from the loin — ribeyes, strips, and tenderloins in your requested thickness
Chuck roasts and steaks for your weekend braises and Sunday pot roasts
Round roasts for slow cooker meals and thin-sliced sandwich cuts
Your share of brisket — trimmed to your specification
Short ribs or back ribs (depending on cut availability from your quarter)
Flank or skirt steak when available
Approximately 40–50 lbs of 80/20 ground beef in vacuum-sealed packages
A note on quarters: A mixed quarter is drawn from across the whole animal — you won't receive only the front or only the rear. This gives you the most balanced and versatile selection. If you have specific preferences, note them on your cut sheet and we'll do our best to accommodate.
Freezer space: Plan for approximately 4–5 cubic feet — a dedicated shelf in a standard upright or a small chest freezer handles it with room to spare.
Cut sheet: Your beef is cut to order. We'll send you a cut sheet when your order is confirmed — choose your steak thickness, ground beef package size, and roast preferences. This is not a preset bundle.
Beef purchases are tax exempt in Texas.
The quarter cow is where most Two + Five Ranch families start. Some never go back to a grocery store for beef. We think you'll understand why when the first ribeye hits the pan.
Half a Cow. A Full Freezer. Beef You Can Trust From First Feeding to Final Cut.
Approximately 250–300 lbs of show-finished Two + Five Ranch beef, vacuum-sealed and frozen.
This isn't bulk beef from an anonymous feedlot. This is half a steer that was raised by a Texas 4-H kid, finished on our proprietary Two + Five Finish Line™ three-phase feed program, and processed at a licensed Texas facility — documented from intake day to carcass report.
We target USDA Prime on every animal that comes through Two + Five Ranch. When we hit it, you'll know — because we share the carcass report.
What's in the half cow: Your half will be cut to order and includes a full selection across every primal:
Loin — Ribeyes, New York strips, T-bones, and tenderloins. The cuts that make people drive to steakhouses. Yours are in your freezer.
Chuck — Chuck roasts and chuck steaks. The cut that low-and-slow was invented for. Show-finished chuck has the fat cap and marbling to hold up to hours in the smoker or Dutch oven.
Round — Eye of round, bottom round roasts, and round steaks. Lean, versatile, the everyday workhorses of a well-stocked freezer.
Brisket — Whole packer or separated flat and point per your request. Texas beef deserves Texas brisket treatment. Ours has the fat content to go the distance.
Ribs — Back ribs and short ribs. The cuts your guests will ask about.
Flank, Skirt & Hanger — The chef's cuts. Thin, intensely flavored, and better on a cast iron than anything you'll find at retail.
Ground Beef — Approximately 80–100 lbs of 80/20 ground beef in 1 lb and 2 lb vacuum-sealed packages. The most versatile cut in the freezer and ours grinds from whole muscle trim — no filler, no mystery.
Freezer space: Plan for approximately 8–10 cubic feet. A standard chest freezer or a dedicated upright freezer will handle a half cow comfortably.
Cut sheet: You choose how your beef is cut. When you place your order, we'll send you a cut sheet — steak thickness, roast sizes, how you want the ground beef packaged. This is custom butchery, not a preset box.
Processing: All Two + Five Ranch beef is custom-processed at a licensed Texas facility. Meat is returned to you labeled per Texas DSHS custom exemption requirements. All products are individually vacuum-sealed and flash-frozen at the facility.
Delivery can be arranged in Texas, or pickup from College Station, Texas.
Beef purchases are tax exempt in Texas.
Every animal in our program has a name, a carcass report, and a 90-day documented finish. If you want to know more about the steer your half came from, ask us. We'll tell you everything.
The One That Needs No Introduction.
The ribeye is the reason people talk about beef the way they talk about beef. Cut from the rib primal — the most naturally well-marbled section of the animal — a properly finished ribeye has fat woven through the muscle in a pattern that bastes the meat from the inside as it cooks. You can't buy that at a grocery store. You can only raise it.
Our ribeyes are cut from Two + Five Ranch show-finished steers targeting USDA Prime grade, vacuum-sealed within hours of processing, and frozen at peak freshness. Ribeyes are 1.5-inch cuts. Sold individually and in packs of two.
Suggested preparation: Cast iron at screaming hot with unsalted butter and a rosemary sprig. Let it rest longer than feels comfortable. You're welcome.
Less Fat Than a Ribeye. More Character Than a Tenderloin. The Serious Steak.
The strip comes from the short loin — a muscle that works just enough to develop flavor but not enough to toughen. On a well-finished show steer, the strip carries serious marbling without the external fat cap of a ribeye, making it the choice for the person who wants their steak to taste like beef, not butter.
Cut at 1.5 inch. Vacuum-sealed and frozen. Sold individually and in packs of two.
Suggested preparation: Same cast iron approach as the ribeye, but this one can handle a little more heat. A show steer strip on a screaming hot grill is a Texas summer moment.
